Nutty Granola Bars

This recipe is from Everyday Foods magazine March 2011.


 3/4 cup honey
2 TBS butter
3 cups old fashioned rolled oats (I used Gluten Free)
1 1/3 cups slivered almonds ( I used whole cocoa almonds that I had and chopped them up)
coarse salt
1 cup raisins or other dried fruit (I used 1/2 raisins and 1/2 cranberries)
1/3 creamy almond butter or other nut butter
1/4 cup light brown sugar.
 1. preheat oven to 325, in a small saucepan, heat 1/4 cup honey and butter over low until butter melts.

2. In a large bowl, combine oats, almonds, and pinch of salt. Drizzle honey misture over oat mixture and stir to combine. Spread mixture over a rimmed baking sheet. Bake until golden brown about 20 mins, stirring occasionally. Let cool completly and return to large bowl, add dried fruit and stir.


3. lightly butter 8 inch square baking dish, in saucepan combine 1/2 cup honey, almond butter, and brown sugar over meidum. Cook, stirring occasionally until mixture comes to a boild and sugar dessolves. drizzle over the oat mixture and stir until combined. Transfer to baking dish. With spatula, firmly press granola into dish. Refrigerate until firm, about 1 hour, then cut into bars or squares.

 Mine came right out of my baking pan so I cut them on the cutting board and placed each one in a snack sized plastic bag.

UPDATE. I HAVE A FRIEND THAT TRIED THIS. SHE SAID THEY LIKED IT BUT DID NOT LOVE IT. HOWEVER HER SON WOKE UP THE NEXT MORNING ASKING FOR MORE.

Peach Oatmeal Muffins

Peach Oatmeal Muffins (from stolen moments cooking )

Mix together
1/3 c brown sugar
1/3 c sugar
1/3 c applesauce
2 T oil
2 eggs
2 tea vanilla
3/4 c milk
Add
1 1/3 c flour
1t cinnamon
1/4 tea salt
1 t baking powder
1 tea baking soda
1/2 tea nutmeg
1 cup oats
Fold in 1 1/2 cups diced peaches
Bake at 400 degrees for 15-20

Sausage and Cheese Waffles

Sausage and Cheese Waffles

I found this reciepe in a magazine, Rachel Ray, but he had the recipe for the waffles and everything but I I used the waffle mix I already had. Added the other intergents, I also double the recipe so I could freeze them for later.

for One batch

1 1/2 cups of waffle mix
1 3/4 milk or buttermilk
1/4 t pepper
4 T butter or oil
2 eggs
2 cups shreeded cheddar chesse ( I did not use this much but would crumbled chesse instead of shredded next time. )
1/2 puond fully cooked sausage (next time I will use hot, the orginal recipe called for chicken sausage)


mix all together and spoon batter onto preheated waffle iron.

We had this yesterday morning on the way to an out of town wedding. I put them in the oven frozen to heat up then just took them with us in the car and ate them without srype. made for an easy breakfast on the go and sticks with you better than just the waffles.
