Taco Dinner Mac & Cheese

John LOVES Hamburger Helper, but I can't stand it or the thought of all the junk that is in it. I thought this might be a good compromise. John did not think much of it which really surprised me but I did like it. One reason I think John did not like it was that I used left over hamburger from our cookout (which was the reason I made this dish, since I had several hamburger left) but he did not like the texture of the burger.


Taco Dinner Mac and Cheese (from Southern Living)

1 package elbow macaroni ( I used three different types of pasta, just leftovers of what I had on hand)
1 Lb browned ground beef ( I used left over hamburgers, diced up)
2 T butter
1 package of taco seasoning
2 T flour
2 c milk
1 (8 oz) block sharp Cheddar cheese shredded
Toppings, tomatoes, avocado, onions, salsa, sour cream, etc

Brown hamburger, drain, return to pan and stir in taco seasoning and 3/4 c water. bring to a boil, and cook for 7 mins.

Prepare pasta according to package, drain.

Melt butter over medium heat, whisk flour until smooth. cook for 2 mins constantly whisk in milk and stir for 5 mins.

stir in 1 1/2 c cheese stir until melted. stir in meat and pasta. Top as you wish
I put cheese, tomatoes, onions, and lots of avocados on mine,
John's had extra meat, onions, and cheese.
